Our Standard

At Il Mattarello we work hard to source the best quality ingredients we can find while keeping our menu affordable.

We make everything we can in house, where we can control the quality, rather than relying on pre-made, outsourced products. Our quality control begins with the suppliers we choose, continues through the kitchen and the bar, and ends on your plate.

In the Kitchen

Our fish is sourced daily, direct from the Sea of Cortez. We choose our meats carefully, from suppliers we know and trust, where the animals are properly raised and fed. Quality and traceability matter to us, so you can enjoy your meal with confidence. We make our bread by hand every day using lievito madre, our natural sourdough starter. We cook with extra virgin olive oil and olive oil throughout the kitchen, turning to a carefully selected vegetable oil only for deep frying. Our goal is to become a 100% olive oil kitchen. We buy fresh herbs daily, and we have started growing our own in pots, with plans for an herb garden to give us a consistent, ready source of fresh herbs.

In the Bar

Our bar follows the same standard as our kitchen. We prepare our juice blends fresh in house every day and build our own syrups by hand, so we never reach for sugary premixes or prepared fruit juices. Fresh herbs, fruit, and citrus come from the same daily sourcing as the kitchen, so what is in season on the plate finds its way into the glass. We source quality bases to round out our mocktails, including tonic, mineral water, and sparkling apple. Whether it is a simple soda, a house mocktail, or a coffee to close the evening, it is made with the same care and the same real ingredients.

What We Leave Out

Just as important as what goes into our food is what we leave out. We do not cook with powdered bases, bouillon, or added MSG, and we build our flavor from scratch. We do not use artificial flavors, colors, or sweeteners, no high-fructose corn syrup, and no artificial preservatives. We avoid pre-made sauces and mixes. When we use tomatoes, they are quality whole peeled tomatoes and plain passata, with no added seasoning, so the seasoning is always done by hand in our kitchen.
